We grow Chardonnay at Jespersen Ranch in the Edna Valley. The vineyard is nestled into a hillside just three miles from the Pacific Ocean and derives much of its personality from the coast.
In 2020 we hand-harvested all of our Chardonnay between August 31st and September 10th, an intentionally early pick as we wanted to maintain the bright acidity from the coastal site. We hand-sorted and lightly pressed the whole clusters directly into barrel for fermentation, and aged the juice in lightly toasted French oak barrels, 50% of which were new. After 11 months in barrel, we selected the best barrels to compose the final blend, and returned the blend to neutral oak barrels for four additional months. The extra four months in barrel evolved the secondary fruit flavors and added complexity to the final wine. With hints of lemon cream, jasmine and pie crust this wine is a wonderful balance of acid and creaminess.
We harvested our Pinot Noir throughout the month of September and divided each block in the vineyard into multiple smaller fermentation lots. We used different techniques on each lot to add complexity and flavor to the finished wine. 50% of the lots included dried stems in the fermentation tank. We aged the wine for 10 months in French oak barrels 38% of which were new. We selected the best lots and the best barrels within those lots for this reserve bottling. This wine features spice on the nose, and black cherry and cola on the palate.
This wine is a rare opportunity to taste a wine made from a single block of Grenache. The site is cool and coastal and in 2020 we made less than 450 cases. This is a stunning, fresh wine with layers of dark red fruit, graphite and spice.
The 2019 growing season was temperate and moderate, resulting in a well-balanced, gorgeous Cabernet Sauvignon vintage. We hand-harvested our Cabernet Sauvignon grapes throughout the month of October with a slow, methodical approach. This allowed us to capture the complex spectrum of flavors that Cabernet Sauvignon is revered for: vibrant, dark cherry, brushy herbs, powerful tannins and full-bodied fruit. We de-stemmed the grapes and fermented them in stainless steel tanks. Only free-run juice was used in this bottling, and we aged it in 42% new French Oak barrels for 20 months before bottling. The wine is vibrant and youthful, with a balance of dark fruit flavors, persistent and plush tannins and a cool, herbal tone.
“Super Tuscan” blends originated from renegade Italian winemakers who scorned traditional blending laws in order to make their own unique wines. Our “Super Paso” is an homage to them. In 2018, our Petit Verdot, which made up half of the blend, had robust color, beautiful fruit flavors and exceptionally well-balanced tannins. Barbera’s plush and approachable profile made it a great counterbalance to the dark Petit Verdot. All four grape varietals were harvested from Bootjack Ranch and fermented individually in stainless steel tanks. The blend was composed shortly after harvest and aged together for 17 months in 40% new French Oak barrels.
