We grow Sauvignon Blanc at Jespersen Ranch, our cool climate vineyard nestled into a hillside near the Pacific Ocean. Our three acres of vines thrive in the coastal environment and derive their character from the rolling banks of coastal fog in the morning and ocean breezes in the afternoon. This is a fresh and vibrant white wine that showcases honeydew melon, hints of grapefruit and fresh-cut grass.
Our goal is to create flavor balance in our Sauvignon Blanc. By picking our grapes in two passes we get the best of both worlds: one expression is crisp and tart and the other fruity and fresh. Most of the wine was fermented in stainless steel tanks and 10% of the wine was fermented in New French Oak barrels for just a kiss of warmth and roundness in the palate. This plus a small amount of secondary fermentation balance the naturally high acidity to create a meld of bright fruit and texture.

"A beautiful cool climate Sauvignon Blanc, with great acidity and aromatics, both brought into an elegant expression with a small amount of oak and barrel fermentation in the mix. The initial impression is herbal and stony, with creamy texture carrying the flavors and driving the fruit components into being in the finish. Lemon, lime, sweet oak spice and a fresh lime zest touch linger well together, and the herb and mineral tones stay in play. Very nicely done!"
