2015 was a challenging year due to a combination of the extended drought and intensive winds during flowering in the Spring which led to small clusters with tiny berries, concentrated with flavor and phenolics.
With such a small harvest of our Estate Cabernet Sauvignon we devoted extra attention to the fruit we did get. Extended maceration techniques and long, slow fermentations allowed peak extraction of phenolics, dark fruit characters and highly finessed tannins. 18 months of barrel aging in carefully selected, quality French Oak softened all of these high pedigree features and the wine developed into a beautifully structured wine with firm tannins that promises a long life ahead.
