Spring Brunch 101 with Chef Andre Averseng

Our Spring Brunch 101 cooking course with Chef Andre Averseng (scheduled just in time for Easter and Mother’s Day) will teach you how to poach the perfect egg, prepare a delicious hollandaise sauce and craft the perfect fruit crepe – all with serious French flair! Chef Andre will also help you create crab cakes and accompanying lemon aioli sauce.

After you have gotten your hands dirty and mastered the techniques, you will adjourn for a lovely seated meal to relish in your freshly prepared brunch items:

Industry Olfaction Seminar

Join Niner Wine Estates and Alexandre Schmitt for a week-long, Level Two Olfaction Training Seminar.

In the wine business, one’s sense of smell is crucial to making, understanding and enjoying wine. But how many wine professionals have had the necessary training to truly develop this sense? How do you distinguish between various types of floral, wood, and fruit aromas?

Everyone has mental images of things – plants, spices, fruits -- but it is still a struggle to articulate exactly how they smell. Take cinnamon, for example -- cinnamon has spicy, woody, leathery, sweet, almond-like, round, hot, and resinous aspects. By describing all of the facets of each aroma, we learn to recognize them and memorize them and master them, says Schmitt, which allows us to identify them, even within the aromatic complexity of a wine.

Olfactory training can assist you in the development of your sense of smell and there is no one more qualified to conduct this training than French Perfumer and International Wine Consultant, Alexandre Schmitt.

The program is as follows:

  • Review of Level 1: The Aromatic Universe
  • Aromatic molecules responsible for defects in wine
  • Molecules due to barrel ageing
  • Molecules from specific grape varieties, positive aromas
  • Identifying defects in contaminated wines
